Pesticide residues are frequently found in vegetables after production due to the application of pesticides during cultivation. Pesticide residues are a source of concern for users since pesticides are known to have adverse effects on organisms besides pests and illnesses. Their hazardous effects, including interfering with reproductive systems or fetal formation, and they being responsible for causing carcinoma and asthma, are significant concerns. To maintain human health protection, all pesticides must undergo a risk evaluation for long-term and short-term exposure. The pesticide may have been consumed by the plant or infiltrated the plant's transportation system, or it could remain on the plant's surface. The pesticide is being volatilized, photolyzed, chemically degraded, and microbially degraded while still on the crop's surfaces. Many advanced technological tools for determining, characterizing, as well as analyzing multiresidues contaminated matrices of various types are being established for this purpose. In this book chapter, we tried to assess the risk of acute and chronic exposure to pesticide contamination of food and vegetables so that effective measures can be taken.
