Abstract

Hen's egg yolk \alpha- and \beta-lipovitellins isolated from 2 different strains of egg yolk, namely White Plymouth Rock and White Leghorn eggs, differed in the proportion of \alpha- and \beta-lipovitellins. Protein components of \alpha- and \beta-lipovitellins were separated by Sephadex G-200 chromatog. \alpha-Lipovitellin gave 2 fractions, namely \alpha |- and \alpha ||-fractions. Similarly, \beta-lipovitellin gave \beta |- and \beta ||-fractions. \alpha ||- And \alpha |-fractions contained several high-molecular-weight proteins, but \alpha ||- and \beta ||-fractions were single proteins, and the molecular weight of each was approximately 30,000 daltons.These 2 proteins differed in their amino acid, P, and sialic acid compounds.
